Soup Recipe
The monthly seniors' lunch of soup and sandwiches was a great opportunity to socialize and to show seniors how much we appreciate them. Until that is possible again, we are looking for soup recipes to share!
“Robbie Burns” Leek & Potato Soup

For the stock:
76 g | butter |
1 Tbsp | vegetable oil |
2 | leeks, roughly chopped |
2 | onions, peeled & roughly chopped |
2 | fennel bulbs, roughly chopped |
250 mL | white wine (or water) |
500 g | smoked haddock |
750 mL | water |
Heat the butter and vegetable oil in a large stockpot and gently fry the leeks, onions, and fennel for 3-4 minutes or until softened. Add the white wine (or water) to the pan and bring to the boil. Add the smoked haddock, pour in the water, and bring back to the boil. Reduce the heat and simmer for 30 minutes, skimming off any scum that rises to the surface, until the haddock is cooked through.
Remove the haddock, reserving the cooking stock. Chop the haddock into bite-sized pieces; set aside.
For the soup:

2 | leeks, finely chopped |
2 | shallots, peeled & finely chopped |
2 | garlic cloves, peeled & crushed |
300 g | potatoes, scrubbed & chopped |
500 mL | whipping cream |
1 Tbsp | finely chopped fresh parsley |
pinch | grated nutmeg |
In a separate pot heat the butter with the vegetable oil and fry the leeks, shallots, and garlic for 3-4 minutes, or until softened. Add the potatoes and the chopped smoked haddock to the pot. Add the reserved cooking stock and bring to the boil, then reduce heat and simmer for 10-15 minutes, or until the potatoes are tender. Stir in the cream and briefly blend the soup with an immersion blender.
Serve the soup with a sprinkle of the chopped fresh parsley and sprinkling of grated nutmeg.

Robbie Burns Day is January 25th. It commemorates the life of the bard (poet) Robert Burns, who was born on that day in 1759. The day also celebrates Burns' contribution to Scottish culture. His best known work is Auld Lang Syne.
