Soup Recipe

The monthly seniors' lunch of soup and sandwiches was a great opportunity to socialize and to show seniors how much we appreciate them. Until that is possible again, we are looking for soup recipes to share!

30 Minute Sausage, Kale, White Bean Soup

1small red onion, diced
2garlic cloves, minced
5hot Italian sausages, removed from casing
796 mLcan diced tomatoes
540 mLcan white beans, drained
1½ cupschopped kale (or spinach)
3bay leaves
2¾ cupslow sodium chicken stock
1 tspsmoked paprika
1 Tbspfresh ground black pepper
1 tspsalt (season to taste)
2 Tbspgrated parmesan cheese, for finishing
 minced chives, for finishing
  1. Place a lightly oiled large pot over medium heat and once the temperature has been reached, add the sausage meat. Cook until browned and then remove from pot and place on paper towel to drain.
  2. Into the same pot, add the onions, garlic, and bay leaves. Allow to sauté until the onions are soft, about 3-4 minutes.
  3. Next, pour in the diced tomatoes and white beans. Using a wooden spoon, stir the mixture and scrape the brown bits off the bottom of the pot. This is flavour left from the browning of the sausages.
  4. Add in the kale, bay leaves, chicken stock, paprika, pepper, salt, and cooked sausage. Stir and then cover and allow to simmer for 20-30 minutes.
  5. Season soup to taste and then serve in a bowl with a little bit of shaved parmesan, black pepper, and chives.
